This is more than one way to store some wine. European vintners used to use large cement tanks to ferment and store their wine and the technique is making a comeback with more modern wineries. Some North Coast wineries has adapt the technique to use with smaller type egg-shape concrete containers.
Don Van Staaveren of Three Sticks Wines says ““In the early history of winemaking, concrete tanks were very prevalent, and there were some really outstanding wines made in concrete tanks, So I thought, well, there’s no reason why we can’t do it again.”
