Have you ever had a hankering for a cupcake, but you also thirst for a frosty brew? I’m not sure a malty, hoppy beer would be the best accompaniment to sweet, rich, gooey baked good. But, what if somehow the two were combined in a way that enabled you to enjoy the best of both delicious worlds?
Honestly, I had never heard of alcohol infused cupcakes before last week. After doing a bit of research (but sadly no tasting yet), I realized that there seems to be a booze cupcakes movement going on in America. Obviously it isn’t at the level of the rise of craft brewing or the momentum of the craft distilling boom. But, one simple web search led me to myriad companies and recipes.
One such business is Two Babes Brewin’ in my hometown of Rochester, New York. This catering and made-to-order business is owned and run by Lyndsey Hicks and Kasie Tierson. “Kasie and I are friends and both bartenders who were sitting and enjoying cupcakes one day while discussing our love for beer,” says Hicks. “We began talking about how awesome it would be to bake beer into cupcakes.”
Hicks was generous enough to answer a few questions for Drinking Made Easy about the business, some of the products available and the science that goes into making alcohol infused baked goods.
How did this business come to be? Kasie, who is an avid baker, went home and gave a try at baking beer into a batch of cupcakes. They turned out pretty delicious. I had always wanted to start a business so we decided to give it a try. We did a “test tasting” at Roc Brewing Co. for their two year anniversary party and the reactions to the cupcakes were so amazing and positive that we decided to take it further and turn it into something real.
Tell me about the products available. What makes them unique? We bake with everything from beer to wine to liquor. They are unique because you rarely come across a baked good that has alcohol in it and we have honed our niche to be alcohol infused cupcakes. We currently have eight cupcakes that are on our menu. Three of our most popular ones are Honey Bunches of Beer- a white cake baked with Honey Brown (Dundee Brewing Company) and honey with a butter cream frosting, Red Devil which is a chocolate cake with Montepluciano wine in the cake and in the butter cream frosting, and then The Le-Booze-ki which was made with a white russian in mind and includes vanilla vodka and kahlua throughout the white cake and frosting.
How do you mix alcohol with the world of baking? It has turned into quite a science actually. Kasie sits down with her trusty notebook and will figure out the chemical composition of the batter in order to make it the most moist and tastiest. The different alcohols all produce a different texture of cake, so you have to get it just right. While most of the alcohol bakes out, we are able to infuse it into the frosting so you really get the taste of the alcohol in it. One awesome result of baking with alcohol is that it appeals to even those who don’t have much of a sweet tooth. Baking with beer makes for a lighter, fluffier cake that isn’t too sweet. While the wine makes a dense and rich cake. We also specialize in miniature cupcakes which allows customer to sample multiple flavors without going into a sugar coma!
Where do you see the future for Two Babes Brewin’? We strategically named our business Two Babes Brewin’ because one, we’re babes and that’s just obvious (laughs) and two, because we have other goals we would love to accomplish with this business. Kasie is a vintner and also has an interest in brewing beer, so if we would like to go down that road in the future we already have a brand established with a suitable name and a reputable product. We are doing what we know now, which is baking, but the brewin’ allows us to expand if we choose.
